My best friend’s mom makes this for every Sunday supper, and the smell alone is incredible. A simple 4 ingredient classic.

Instructions

Step 1: Prepare the vegetables
Preheat the oven to 400°F. Lightly grease a metal baking pan with a small amount of butter. Cut the potatoes into evenly sized chunks and slice the onions into thick pieces.
Tip: Keep the onion slices on the thicker side so they soften and caramelize without burning.

Step 2: Coat everything evenly
Place the potatoes and onions in the prepared pan. Drizzle the melted butter over the top and sprinkle with salt. Toss until everything is well coated.

Step 3: Roast without stirring
Spread the mixture into a single layer and bake for 25 minutes without touching it.
Tip: Leaving it undisturbed helps the bottoms develop a crispy, golden crust.

Step 4: Stir and finish roasting
Remove the pan, stir everything—making sure to scrape up any browned bits—and return it to the oven. Continue roasting for another 20–30 minutes, stirring once or twice during this time.
What to look for: The potatoes should be soft on the inside with crisp edges, and the onions should be tender and golden.

Step 5: Serve immediately
Taste and adjust the seasoning if needed, then serve hot. Be sure to scoop up the caramelized bits from the pan—they add the most flavor.

This dish is proof that a few basic ingredients, cooked the right way, can turn into something deeply comforting and full of flavor.
