Ingredients

For the Crust

  • 2½ cups all‑purpose flour

  • 1 teaspoon salt

  • 1 cup shortening, chilled

  • ½ cup cold water

For the Filling

  • 8 cups peeled, cored, and sliced apples (about 6–7 medium apples; Granny Smith, Honeycrisp, or a mix)

  • 1 cup white sugar

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • 2 tablespoons butter, cut into small pieces

For Finishing (Optional)

  • 1 egg yolk + 1 teaspoon water (for egg wash)

  • Coarse sugar, for sprinkling
