Ingredients :
Dry cottage cheese – 500 g
Eggs – 1 to 2 pieces
Semolina (or flour for those who don’t like flour) – 5-6 tablespoons
Salt or sugar – to taste
Butter – optional and to taste
Preparation: Since ravioli dough comes together quite quickly, I first put a pot of water on the stove and turn on the heat. Meanwhile, I make the dough without kneading it by hand; I simply mix all the ingredients with a spoon in a suitable bowl. To the bowl with the cottage cheese, I add the eggs, salt or sugar, and semolina.
