Step 1: Season the Steak
Lay the cubed steaks out on a plate and season both sides generously with salt and pepper. A light dusting of garlic powder adds warmth without overpowering the gravy.

Step 4: Build the Gravy Base
Reduce heat to medium. Measure about 3 tablespoons of drippings into the skillet. Sprinkle in the flour and whisk constantly for 1–2 minutes, scraping up the browned bits from the bottom.
The roux should turn a warm brown — not pale, not burnt.
Step 5: Add the Broth Slowly
Pour in the beef broth a little at a time, whisking continuously to avoid lumps. The gravy will thicken as it comes together.
Season with onion powder and black pepper. Taste and adjust.
Step 6: Return the Steak and Simmer
Nestle the steaks back into the gravy, spooning sauce over the top until they’re mostly covered.
Reduce heat to low, cover, and simmer gently for 30–45 minutes, turning once halfway through.
The gravy will deepen. The meat will soften. The kitchen will smell like supper.
