Step 2: Boil to Remove Bitterness

Place the peel strips into a saucepan and cover with cold water.

Bring to a boil, then drain.

Repeat this process two more times — three boils total.

This step is essential. It softens the peel and removes bitterness, leaving behind a gentle citrus flavor that balances beautifully with the sugar.

Step 3: Simmer in Sugar Syrup

In the same saucepan, combine:

  • 2 cups sugar

  • 2 cups water

Bring to a gentle simmer, stirring until the sugar dissolves.

Add the boiled peels back into the syrup. Reduce heat to low and simmer uncovered for 45–60 minutes, stirring occasionally.

The peels should become:

  • Translucent

  • Glossy

  • Soft but still holding their shape

The kitchen will smell incredible at this point — warm, sweet, and unmistakably nostalgic.


Step 4: Dry the Peels

Using a slotted spoon, remove the peels and lay them out on a wire rack or parchment-lined baking sheet.

Let them dry at room temperature for 12–24 hours, turning once or twice if needed.
